Ingredients for making marijuana mayo
- 2 large eggs, ideally home-reared, left at room temperature for a while
- 2 teaspoon of freshly squeezed lemon or limet juice
- A little hemp oil – recipe for hemp oil
- 2 pinches of sea salt
Separate the egg yolks in a large bowl.
Add lemon juice (or vinegar) and whisk for 2-3 minutes to form a sabayon (a thick and airy emulsion).
Continue whisking and slowly add the hemp oil a few drops at a time until everything is incorporated.
If the cannabis mayonnaise is too thick, you can dilute it by adding a teaspoon of water. If you find the mayonnaise too runny, whisk another egg yolk with the lemon juice in a clean bowl and then slowly whisk the two mixtures together until thick and fluffy. Season with salt, pepper and other spices to your taste.
Voilà cannabis mayo is ready to serve or become a part of another dish.
You can store homemade hemp mayonnaise in a covered container in the refrigerator for up to 3 days. If it becomes bitter, you can balance it with a sugar.
